Jumbo Cinnamon Rolls

Okay, I have been making these DELICIOUS Cinnamon Rolls since 2017 and They are BOMB! I have had people run across the street at 9pm with a plate because they wanted a few of my Jumbo Cinnamon Rolls. They are seriously so good!
Aside from my bread loaf and rolls recipes, I do not rush through this. I let the dough take its sweet time. This process takes approximately 2 1/2 hours.

You can make these without a stand mixer. I Did!
For the first 4 years making these cinnamon rolls, I mixed with a rubber spatula. And let me tell you, I gained a Lot of muscle! For Christmas in 2021, My husband bought me this Beautiful, excellent Stand Mixer! It's a Kenwood Major km020, 800W (7-QT) you can find HERE, and the 5QT HERE. **Those amazon links, will get you the mixer a LOT cheaper than if you went to Samstores, and purchased it for $1,078.00!**
When we sold our Home and Property, and purchased our camper to travel, I got rid of MANY kitchen appliances, However, I could Never let go of this Mixer. Yes, It has traveled the country with us! Along side our handy air fryer! (Which you can purchase HERE!)
When we lived in our Sticks and Bricks house, My boys were adament that i made them Jumbo Cinnamon Rolls EVERY SUNDAY! I nudged just a tid bit, and got them to agree to Bi-Weekly, wheew! But they enjoyed it Every time it came around, and So did the neighbors!

I Especially make these for Holidays, such as Easter, Independence Day, Thanksgiving, and Christmas morning!
Anywho, on to my recipe!
I have been asked by many of my family members for my recipe, especially this last 2 years, So this is dedicated to you all!
Jumbo Cinnamon Rolls Recipe (makes 12 rolls)
Ingredients:
Dough
1 cup warm Almond Milk
3 Tbsp melted butter
2 Tbsp raw honey
1 Tbsp Instant Dry Yeast
1 tsp salt
1 egg
3 cups flour
Cinnamon Filling
1/2 cup melted butter
1 cup packed brown sugar
2 Tbsp Cinnamon powder

Cream Cheese Frosting
4 oz cream cheese
1/4 cup softened butter
1 1/2 cups powdered sugar
1 tsp vanilla extract
1/2 tsp almond extract
1-2 Tbsp almond milk
Instructions:
Combine milk, and butter in microwave-safe bowl, and heat for approx. 45 sec-1 min until warm. (NOT HOT)
Pour into stand mixer, adding raw honey. Stir until combined.
Add Yeast and stir until combined. Let rest for 5 min.
After 5 min, there should be a foamy yeast layer on top of the mixture. (If it's not foaming, you may have made your mixture too hot, and you will need to start over.) Add egg & salt, stir.
Begin adding flour 1 cup at a time until dough starts to form. Then add flour 1/2 cup at a time, until dough pulls away from the bowl and isnt super sticky!
transfer dough to a lightly floured surface and knead for about a minute. Form into ball.
grease a large bowl, and transfer the dough ball to the bowl, and cover. Let sit for 1 Hour!
While you wait for your dough to rise, you can make the filling.
In a small mixing bowl, combine melted butter, brown sugar, and cinnamon. Stirring until combined.
When the Hour is up, Your dough should have doubled in size! Punch the dough and then transfer to a lightly floured surface. Roll into a 12x18in rectangle
Using a rubber spatula or a spoon, spread the filling over the dough. Cover entirely.
Roll the dough tightly length side.
Many recipes say to use floss to cut the rolls, However I have had no problem just using a good, sharp knife. Cut 12 rolls and place on a lightly greased baking sheet.
Cover and Let it Rise for 40 min.
Preheat the Oven to 325 degrees. Bake for 15 min. (or until light brown)
While you wait for your rolls to bake, prepare the Cream Cheese Frosting!
In a medium size mixing bowl, combine soft cream cheese & softened butter.
Add in vanilla, almond extract, and milk.
Once combined, add in powdered sugar 1/4 cup at a time.
transfer to a piping bag (Or use a ziplock bag, and cut a small hole in the bottom corner to squeeze frosting through)
When Rolls are ready, remove from oven, and let sit for 5-10 min.
Start drizzling the cream cheese frosting over top of the cinnamon rolls, and serve and enjoy!
Storing:
You can store these cinnamon rolls for half a week, in a sealed container in the refrigerator. After that, they begin to dry out. When you take them out of the fridge, sprinkle a little water over the top, and reheat them until the cream cheese frosting begins to melt. It will be just as soft as when they were first made!
